Spanikopita

Spanikopita
Spinach Cheese Pie
Serves: 6-8

From: Sphere Magazine, Vertical Marketing, Inc. 1972
Time 2 hours
For the crust, either use:
1 16 oz. packages frozen phyllo pastry sheets 
 ...OR...
1 package 8 oz. cream cheese softened
1 c butter, softened
2 c white flour

Ingredients for Filling:
1 large white onion, finely chopped
3 T olive oil
24 oz. fresh spinach, chopped
1 t salt
3/4 c feta cheese, crumbled 
1/3 c pot cheese (or small curd cottage cheese dry or drained)
1 egg lightly beaten

Directions for preparing the crust:
If you use the phyllo pastry sheets, follow the directions on the package and lay half the sheets in the bottom of a 9" pie plate coated with butter, and the other half on top over the filling.
...OR...
  1. Mix Cream cheese and butter in a bowl.
  2. Cut into flour until dough gathers together. Press into a ball, cover and chill until firm enough to roll (about 20 min in the refrigerator.)
  3. Divide dough in half and shape into 2 flattened rounds. On a lightly floured board, roll the bottom crust to about 11-12" in diameter. 
  4. Fold pastry into quarters; transfer into pie plate and unfold. Trim overhanging crust to 1/2" from edge of plate.
  5. Roll top crust similarly and reserve.
Directions for preparing the filling:
  1. Cook and stir onion in olive oil until tender and translucent
  2. Remove from heat and stir in remaining ingredients
  3. Heat oven to 325 F
  4. Spoon filling into pastry lined pie plate - either the phyllo pastry or rolled crust. Cover with phyllo sheets according to the directions on the package or place the rolled top crust, seal and flute the edges.
  5. Prick or pierce top with a fork or knife.
  6. Bake until golden brown, about 1 hour and 10 minutes. 
  7. Cool and serve. Enjoy!




Eggplant Flan



Almodrote de Berengena
Eggplant Flan

Serves: 6-8
From: The Book of Jewish Food by Claudia Roden
Time: 2 1/2 hours

Ingredients:
4 lb. eggplants
8 oz. feta cheese
2 eggs lightly beaten
2 large slices white bread, crusts removed

1 c grated kashkaval or Gruyere cheese
5 T sunflower oil Directions:

Directions for preparing the eggplants:
  1. Pierce and roast eggplants in a hot (450 F) oven for 45 minutes turning several times.  
  2. Let cool and peel or scoop out the flesh into a colander. Drain and press out the juices.
  3. Chop the drained flesh (with 2 sharp knives) and mash with a wooden spoon. You may refrigerate or freeze this for later use.
 Directions for preparing the filling:
  1.  In a bowl, mash the feta cheese with a fork.
  2. Soak bread in water and squeeze dry.
  3. Add eggs, bread, kashkaval or Gruyere cheese reserving 2 T of the cheese.
  4. Add 4 T sunflower oil and beat the mixture well.
  5. Add eggplant and mix well.
  6.  Pour into a baking dish, sprinkle top with remaining oil and cheese.
  7. Bake at 350 F for an hour or until lightly browned.
  8. Cool and serve or you may refrigerate and reheat later if desired. 
Variations:

  1. For Almadrote de kalavasa substitute zuchini for eggplants
  2. For a creamy flan: Increase eggs to 3 and add 1 c heavy cream to mixture. After folding in eggplant puree in a food processor and run through a sieve. Salt and pepper to taste. Pour into spring-form pan lace dish in a pan with 1 inch of water and bake for 50m-1 hour. 
  3. For spicier flan add 1 Tbl cumin, 1/4 tsp cayenne, 1/4 tsp black pepper and a large pinch salt to filling mixture.

10 Grain Challah Recipe

  Honey Wheat Challah

with 10 grain cereal

Time: 4-5 hours
Makes 4 braided loaves

Dry Ingredients:
2 T dry yeast (or 2 oz. packet)
1 T raw sugar
6c organic unbleached white flour
3c organic whole wheat flour
1c organic spelt flour
1/3 c 10 grain cereal (e.g. Bob’s Red Mill 10 Grain Hot Cereal)
1/4 c  course ground organic golden flax seed (optional)
1 T sea salt

Wet Ingredients:
2 1/4 c water – luke-warm
4 large organic eggs
3/4c extra virgin olive oil
1 c honey
For Glaze:
whisk 1 egg and 2T water
Poppy or sesame seeds (optional)

Directions:
Note: This recipe uses the “sponge” method which adds one rising period to the dough. To use the conventional method and save time you may skip step 5 and combine all the dry ingredients at once.
1. Dissolve yeast and raw sugar in the warmed water. Mix thoroughly and let stand for 10 minutes.
2. In a 5 quart mixing bowl, whisk together the eggs oil and honey. Mix thoroughly and add yeast mixture. The yeast mixture should have a large head of foam. If it does not you may have used excessively hot water – killing the yeast.
3. In a separate bowl, sift together the flour. Add the 10-grain cereal and optional flaxseed but do not add the salt.
4. Make the “sponge.” For mixing it is best to use a heavy duty stand mixer (e.g., kitchen Aid) if you have one. Using the whisk or beater attachment, mix about 2/3 of the sifted dry ingredients into the wet ingredients gradually so that the batter always remains smooth and wet. Continue to add the dry ingredients gradually so as to avoid clumps but hold about 1/3 in reserve. Add the salt to the reserve dry ingredients.
5.  When the batter consistency becomes too heavy for the utensil, set the sponge aside in a warm place for about 45-60 minutes or until double in volume.
6.  Return the bowl to the mixer and using the bread hook attachment continue to add the dry ingredients gradually. Continue to knead the dough in the mixer for 10-15 minutes or until the dough begins to separate cleanly from the side of the bowl. It is alright not to use all the dry ingredients – hold about 1/3 cup in reserve once again to use in the final mixing stage. (If you do not have a machine to do the kneading, knead the dough strenuously for about 15 minutes.)
5. Turn the dough out onto a floured surface and continue to knead by hand adding the flour mixture that you held in reserve as necessary until the dough is soft and elastic but not sticky.
6. Oil a large shallow bowl generously and place the dough upside down in the bowl and then flip over so that the top is well coated with the oil. Cover with a damp dish towel. Allow dough to rise in a warm place until at least double in volume (about 75-90 minutes - rising time is longer in the winter than in the summer.)
7. Punch down dough and turn onto a lightly floured surface. Knead for a minute or two. Cut dough into 4 equal pieces and form into round balls. Place three of the pieces of dough into a newly oiled bowl and cover.  Begin making the remaining piece into a loaf.
8.  Separate the dough further into 6 equal pieces and roll each into 14-15” long strands, first rolling between the palms and then on the bread surface. Braid the strands to make a loaf. This takes some practice. I learned this step by watching a few videos on YouTube. The six strand braid is much more elegant, but if you don’t want to take the time to learn this, simply use a three strand braid.
9.  When the loaf is braided brush lightly with oil to keep moist while rising and place on an oiled baking sheet. Repeat process for each of the other loaves. Set loaves in a warm place to rise for 60-90 minutes.
10. Before putting risen loaves in the oven, brush them with egg glaze and sprinkle with poppy or sesame seeds (optional). Bake in a 350 deg. Oven for about 25-30 minutes or until evenly golden brown. When done remove loaves to a rack and cool for 20 minutes before eating. Enjoy!

Shabbat Recipes: Borscht

Loren’s Beet Borscht
Serves: 6-8
Time: 50-60 mins

Ingredients:
2 lb. red beets with greens intact
3-4 cloves garlic crushed
1/4c olive oil
1 med red onion (optional)
1qt vegetable broth
4c water
3/4 t turmeric
1/2 t fresh thyme (dried optional)
1/4 t fresh oregano (dried optional)
1 bay leaf
1/2 t Sea Salt
1/2 t white Pepper to taste (fresh ground white pepper preferred)
Hold in reserve:
Juice of 2 fresh lemons
3/8 c raw sugar
1/4c heavy cream
2 T fresh chives
Directions:
1. Wash beets – do not peel. Remove greens and clean out any that are limp or discolored.
Cut beets into 1” cubes. Slice red onions.
2. In a 4 quart stock pot or large Dutch oven, sauté onions in oil. Add garlic (crushed in a press). Add beet greens and salt and cook for a few minutes on low heat. Add beets.
3. Add water and vegetable stock and spices. Bring to boil and simmer for 30 minutes. Let cool for 15 minutes.
4. Puree beet mixture in blender in several batches.
5. Whisk together lemon juice and sugar. Add ¾ of mixture to pureed beets. Taste and add more sugar and lemon as desired.
6. Serve warm, or chilled in bowls and drizzle with cream. Garnish with fresh chopped chives. Enjoy!

Shabbat Recipes: Israeli Cous Cous


Israeli Couscous 
with Cranberries and Pecans
 

Serves: 6-8
Time: 30-40 mins
Ingredients:

Salad:

3c Israeli couscous, uncooked
1c dried cranberries
1c toasted pecans, quartered
3 scallions, minced
2-3 cloves minced garlic

Dressing:

1/4c canola oil
1/4c honey
2T champagne vinegar
Zest of 1 large Valencia orange
Juice of 1⁄2 the orange you just zested (all if orange is small)
3/4 t turmeric
1 t dried thyme
1 t dried tarragon
1/2t ground cardomom
1/4 t Sea Salt
white pepper to taste (fresh ground preferred)

Directions:
1. Bring a pot of salted water to a boil, and add the couscous. When it's done (roughly 8-10 mins, or when it's al dente), drain it but do not rinse. Set aside and let cool while you mince the scallions, garlic, toast and chop the pecans, and make the dressing.
2. In a small bowl, whisk together the canola oil, honey, vinegar, orange zest and juice, spices and salt and pepper. (Or mix in a food processor – drizzle the oil in last)
3. In a large bowl, combine the couscous, cranberries, pecans and scallions. Pour the dressing over it and toss to combine.
4. Serve immediately, or chill in the fridge for a few hours to blend the flavors. Enjoy!
